The Unhealthy Stretch

With spring in the air, millions of people are once again becoming focused on shedding those unwanted pounds that seem to sneak onto their waistlines during the winter months. Regardless of what or how you choose to eat, remember the following principle: the more fresh, organic and unprocessed the food that you choose to eat, the more vibrant health you can expect to create for yourself. Your daily habits will determine the state of your well-being. Eating raw foods does not have to be an all or nothing affair, although the more the better. However, whatever you decide to eat on a regular basis, the more raw foods that you choose to include in your diet, the more vital energy you will have for all of your daily energy and nutritional needs.
Raw Food Diet
The raw food diet is a food plan that can have great benefits. After a few months of following our recommended whole foods diet, one can then transition into a high level raw or 100% raw food diet, as desired. This diet is composed of raw and live foods only, and includes a wide selection of raw fruits, vegetables, soaked and sprouted nuts and seeds and sea vegetables, in a wide variety of creative combinations. If choosing a raw food plan, we highly recommend daily consumption of fresh green juices, made from an array of green vegetables, such as celery, romaine lettuce, spinach, carrot, kale, parsley, with an ever rotating seasonal selection of other organic veggies. Daily salad meals, dehydrated flax crackers, seed and nut pates, blended soups, smoothies and marinated vegetable salads, often mixed with soaked sea vegetables are the base for the raw diet. Since little to no cooked food is consumed, a raw diet has the advantage of instant elimination of many common allergens. No cooked wheat, wheat byproducts or grains (generally) are consumed, and very little, if any, dairy products. Does Eating Raw Foods Make Sense In The North?By Frederick Patenaude
Have you bought the idea that a completely raw food diet is the ultimate, most logical, best diet for all humankind, no matter where they live in the world? (Like eskimos eating watermelon...)
It seems to me that it's the implied idea transmitted by many raw-foodists, raw food website, books and seminars.
The idea is:
Raw Food is Good, Cooked Food is Evil, and the World Would Be a Better Place If Everyone Ate Only Raw Foods
OK, I may be exaggerating, but often that's the general tone of many of the raw food gurus' message.
Is it actually true?
Would it be possible that the resources required to transport those foods would actually make the raw food diet fairly unecological, considering the fact that eating a diet of bananas and mangoes in Northern Canada isn't the most natural choice?
How much food do you need as a 100% raw food eater?
It's fairly well-known that anyone deciding to eat only raw foods in a sustainable way (for health) needs to eat a tremendous quantity of fresh fruits and vegetables.
In order to get enough calories from fruits and vegetables, without using too much raw fat (which would be detrimental for health), here's the average amount of food that's necessary:
For a 2000 calorie diet: 10 pounds a day (with peels and all) For a 3000 calorie diet: 15 pounds a day (with peels and all)
I based those numbers on average consumption most 100% raw foodists go through in a typical day (those who are not on a detox program!).
So basically, 70 to over 100 pounds of food per week!
That's a lot.
Where does your food come from?
If we would want to get a more accurate picture on the ecological impact that eating a large quantity of imported fruits would have versus a smaller quantity of local cooked, animal or grain foods, we would need to analyze a lot of variables. I haven't been able to get an accurate estimate from the data that's available.
But just knowing that most imported fruits come from fairly far away, and that large quantities are necessary on a completely raw food diet, I can draw the obvious conclusion that eating this way is not necessarily the most logical, natural and ecological choice.
Consider that:
- Grapes from Chile travel a minimum of 4000 miles to get to you - Bananas from Costa Rica travel about 2000 miles or more to get to you - Mangoes from Mexico at least 1000 miles to get to you - And so on...
All of the fossil fuels used to transport all of these foods leave an impact, which may offset or even counter-balance the possible environmental benefits of choosing a raw vegan diet (which requires less resources when produced locally), versus a local diet that would contain both raw, cooked, plant and possibly even animal foods.
It's always been obvious to me that a diet of all raw foods in Canada makes less sense on many levels that one that includes some cooked foods, more local foods and fewer imported fruits.
There's also the fact that these fruits are picked unripe in many cases, the acidity level is too high and the nutrient level too low.
So is the solution for all raw-food enthusiasts to move to the tropics? Certainly not!
My point is:
- There's no need to demonize cooked food - A diet that includes both raw and cooked food makes a lot of sense on many levels. You don't have to eat 100% raw. This is really an individual choice based on your health, your location, and your preference.
- A raw food diet can be unnatural - Eating 100% raw foods in the north can be unnatural and unsustainable. And for many more reasons that I can expand on in future articles, it's certainly not a solution that can be proposed to the entire world!
- If you live in the north, follow the seasons - Many people, as summer approaches, have the desire to include more raw food in their diet. But in the winter, instead of freezing to death, they choose to incorporate more raw, cooked foods. That is perfectly fine, natural and even desirable for most people.
Here's a list of some additional tips to enable you to eat more ecologically and sustainably, while incorporating more raw fruits and vegetables in your diet, no matter where you live:
1- Freeze Berries and other Fruits in Season - Berries are some of the most nutritious and antioxidant-packed foods you can eat. To avoid the consumption of too much imported foods in the winter, I encourage you to freeze a huge quantity of ripe, local, organically grown (or wild) fresh berries when they are in season. I personally freeze a lot of wild blueberries, which are local. Then, use them throughout the winter in your recipes. You can thaw them in advance to avoid the negative effect of consuming cold foods.
2- Grow Sprouts - Grow some fresh, toxin-free sprouts such as clover and sunflower greens, to get a supply of cheap, fresh, local vegetables in the winter!
3- Avoid out of Season Fruits - Some fruits may be available in your store, but may actually be out of season in your hemisphere of the world. If you live in North America, the season for grapes usually ends in September or October. Grapes during the winter are imported from countries situated in the opposite hemisphere, such as Chile, where the seasons are reversed. Avoid that! Learn the seasons of different fruits and vegetables and choose to avoid foods imported from such far-away places.
4- Make Different Salads and Vegetable Dishes in the Winter - In one of my recipe books, I give different kinds of salads and dressings depending on the season. In the winter, I recommend salads made with cabbage, carrots and other root vegetables. In the summer, I incorporate more lettuce, tomatoes and fresh vegetables. You should do the same.
5- Shun Exotic Fruits - Exotic fruits such as durian, Thai coconuts and litchis can be great to try, but they inevitably come from faraway countries such as Thailand. In addition to leaving a huge ecological impact for being imported from so far, they are also heavily sprayed with toxic chemicals. Durians are particularly notorious for that. Try them for fun, but stick to fruits and vegetables as local as possible - at least from somewhere you could drive to.
Finally, I would like to encourage you to continue making the best choices for your health. Sometimes, that may sometimes mean:
- Eating fresher, locally grown commercial foods instead of less fresh, imported organic foods - Eating ripe, local commercial food instead of unripe, imported organic foods - And eating some cooked, warm "local" food instead of just cold imported fruits
Lookt at true consequences of your own choices, and realize that there's not one size that fits all.
*A Few Important Nutrition Tips*
1- Fruits and Veggies, Not "Living Foods" -- There's
different philosophies in the world of raw foods, and I
belong to those who promote the health benefits of fruits
and vegetables, instead of focusing merely on "raw" or
"living foods."
In the world of "living foods", the belief is that any type
of raw food is good for you. So as long as it's raw and
vegan, it's supposed to be good. Also, there's a widespread
but unfortunately false belief that "enzymes" in raw foods
are somehow important to get. This is not the case. The
enzymes in raw foods have actually no real value for us and
are destroyed anyway in the digestive process. I busted the
"enzyme" myth in my book "The Raw Secrets" (available at:
http://www.fredericpatenaude.com/rawsecrets.htm) and showed
you that the important thing was to make fruits and
vegetables the main part of your diet, and not seek
enzyme-rich foods, such as sprouts, wheatgrass juice and
fermented foods, which are actually not necessary.
In my opinion, raw foods are not always superior to cooked
foods. Cooked vegetables and greens such as sweet potatoes,
yams, broccoli, etc., are healthier, easier to digest and
more nutritious than high-fat combinations of nuts, seeds
and oils that are common in many raw food recipes.
So my point is, instead of just thinking in terms of "raw"
versus "cooked", think in terms of eating a *lot* of fruits
and vegetables, making them the basis of your diet.
2- Think Low Fat. The next principle is about fat. It's
imperative to lower the fat content of your diet, and not
fall into the belief that "raw" fats in excess are somehow
good for you. A low-fat diet has many benefits, including
better blood sugar balance, better energy levels and better
overall health.
In order to eat a low fat diet, you have to eat more
carbohydrate foods. In the cooked food world, these
carbohydrates should be: root vegetables, whole grains,
beans, and other whole, starchy foods.
In the raw world, these carbohydrates should come from
fruit. To help you lower the fat content of your diet, I
suggest to:
- Avoid oils as much as possible (including olive oil, yes)
- Avoid eating large quantities of raw fats, such as
avocados, etc.
- Calculate how much fat you're eating by going to
www.fitday.com. Ideally, you want to be under 20%, at least.
3- Think Fruit. Once you lower the fat content of your diet,
you'll have no choice but replacing those calories with
either fruit or cooked carbohydrate. So let's talk about
fruit.
Fruit is a healthy food! No, it doesn't cause blood sugar
problems, and yes, you can still eat it even if you feel it
causes a "sugar high."
You see, the key is to lower the fat content in your diet.
Fat is really the culprit, when it comes to blood sugar
issues. If you're not sure that what I'm saying is true, you

4- Blend, Don't Juice. Juices are really popular in natural
health circles, but actually, they're not that healthy, even
when they're made at home.
The problem with juices is that the fiber has been removed.
And fiber is a really important component of food. It helps
to slow down the release of natural sugars into the blood
stream, among other things.
Also, it's been found that people who drink juices consume
extra calories without realizing it. When you eat a whole
orange before a meal, for example, you feel less hungry and
will automatically eat less of your meal. But if you drink a
glass of orange juice, it won't really affect your hunger,
and you'll eat just as much. That's because the fiber of the
orange was missing in the juice. Your body didn't get the
signal it was full.
What I recommend is to start blending more stuff instead of
juicing it. I personally couldn't live without my Vita-Mix.
I use this thing every single day.
But you don't have to spend that much on a blender (the
Vita-Mix costs more). However, if you had to buy only one
kitchen appliance, I would recommend getting a very good
blender without hesitation.
5- Green Smoothies Are Great. I'm a big fan of green
smoothies. The idea is weird at first, but will really make
sense once you try it.
A Green smoothie is a smoothie of mixed fruits and greens.
For example, you could try blending a mango or another
fruit, a cup of water, a couple bananas and a big handful of
spinach or romaine lettuce.
The result is a strange but tasty mixture that has
revolutionized the health of thousands of people around the
world! Why? Because greens are essential to our health, and
blended greens are much easier to assimilate than whole
greens.
It's almost the perfect combination: the natural energy and
vitamins from fruit with the protein and minerals from
greens.
It certainly beats any "power smoothie" you'll ever taste.

6- Worst Foods to Avoid. I believe your health will improve
not so much by *adding* certain foods in your diet, but
actually more by *removing* foods that are making you sick.
So what are these foods that you should remove? Here's a
quick list, along with a brief explanation for each item:
- Caffeine. It's a strong stimulant, a drug that exhausts
your natural reserves of energy, drains your adrenal glands
and affects your health negatively in hundreds of possible
ways.
- Dairy Products. They're concentrated in saturated fat,
environmental toxins and hormones that you *don't* want to
have in your body.
- Flour and Refined Grains. They're mucus-forming,
acidifying and extremely poor in nutrients.
- Fried Foods. They cause cancer. Enough said.
- Junk Food. You already know why they're bad. This includes
doughnuts, soda, French fries, potato chips, etc.
- Grilled and Barbecued Meat -- If you want to protect
yourself from cancer, avoid those.

“7 Things You Can Do Today to Get Back on Track With Your Diet”

I have a confession to make. I'm not perfect. Sometimes, I fall off the wagon with my diet and fitness activities.
Sometimes I eat more fat than I would like too. Sometimes I eat foods that don't make me feel great. Sometimes I end up being sedentary for a little while.
Let's face it. It's rare that you'll find someone who will commit 100% to something and never look back or have a breakdown. But your ability to succeed will be measured by your determination and focus, as well as your ability to learn from your “mistakes”.
So here are 7 things you can do *today* to get back on track with your diet.
1- Don't Be Hard on Yourself
We're really fast at acknowledging our shortcomings, but much less at acknowledging our successes. It's very easy to beat yourself up when you fall off the wagon and never take time to celebrate all the successes you've had so far.
So don't be hard on yourself and just look at what you've accomplished, no matter how small it may look! Compared to where a lot of people are at right now, you've already come a long way.
2- Reset Your System and Fast
In my book “The Raw Secrets”, I talked about the value of occasionally fasting 24 to 36 hours, or even 2-3 days (longer fasts should be supervised).
This is especially useful to get back on track with your diet. Fasting just 24 to 36 hours will literally “reset” your system and make it much easier to start eating right again.
Don't get me wrong. I don't suggest doing the harmful pattern of binging now and fasting later. I'm just saying that a short fast might be just what you need to give your body a chance to get back to a state of balance.
You can refer to my book “The Raw Secrets” for more information. If you're unsure about doing a short fast or your health does not permit it, then simply having a couple days of mono-fruit meals (only eating one type of fruit per meal), will give you great results.
3- List Your Benefits
When you have the time, take a moment to list all of the reasons *why* you are committed to a healthy lifestyle. Why do it at all?
Unless you know the *why*, you won't know the *how*. Any small difficulty will throw you off balance.
So your homework assignment is to list at least 25 benefits or reasons for eating well (however you define it at this point) and exercising. Then put this list in a place where you can see it!
4- Recommit
Commitment is very important. It just means that you're willing to do whatever it takes to get to where you want to go.
After you've listed your benefits, take a moment to commit to your success. All it takes is *share* your list with someone else, someone who can support you (ideally, your “success buddy”!) and tell them you commit to achieving those results.
5- Give Yourself a Goal
In addition to writing your list of benefits, give yourself one to three short-term goals that you believe you can accomplish within the next 6 to 12 months.
Maybe it is to *release* a certain amount of weight. Maybe it is to lower your body fat level down to a certain percentage. Or maybe it is to succeed doing so many push-ups in a row.
Set a few realistic goals that are also a little challenging, and keep your mind focused on them.
6- Be Prepared for the Next Breakdown
No matter how well you do in life, there *will* be another breakdown. I'm not saying that you'll necessarily fall off the wagon. Maybe it will just be a period of doubt and fear. Or you'll find yourself in a situation where you're not sure how to maintain your diet.
Prepare for success and envision different things that could potentially be challenging. What would you do in those moments? Take a moment to think about that and discuss it with your coach or someone who supports you.
7- Get Coaching and Support
Even the best athletes in the world have their own coaches. How do you think that you will make it without one?
A good coach will not only push you to get beyond where you want to go, but will also support you in the process and celebrate your successes with you.
Without coaching and support, it will be much more difficult to make your list of benefits come true.
If you can afford it, having a personal health coach will make a tremendous difference for you.

A lot of people ask me, “Fred, what should I do about all of that fruit in the raw food diet? I have candida and I can’t handle a lot of fruit.”
Others would like me to come up with a menu planner that includes only 2 or 3 fruits per day (instead of the several pounds per day featured in my menu planners).
I will talk a little bit about this now with a disclaimer: I am not making any promises or even recommending a specific diet to anyone. I am just giving my thoughts based on my experience and research.
Candida is not all that it’s claimed to be. It’s not “caused” by sugar but rather exacerbated by the consumption of sugar (even natural ones like fruit).
However, the sugar is not the *cause* of candida. Candida is much like a fungus that will proliferate in the presence of excess sugar in the blood stream. Some theories say that the fungus is actually doing you a favor by getting rid of that excess sugar.
The problem is: why do people end up with excess sugar in the bloodstream.
The obvious answer is “because they eat sugar”. However, it’s not really the case.
Why? Others can eat plenty of natural sugar in the form of fruit and not experience any candida symptoms.
Normally, when you eat sugar (in a banana for example), that natural sugar should be used up fairly quickly by your cells. It shouldn’t accumulate in the blood stream.
When that happens, you may end up with Candida (among other problems).
The real problem is that sugar is being “trapped” in your blood stream without getting to the cells, where it’s supposed to go.

Here are some ways to bring this process back to normal:
Reduce the fat in the diet — People don’t get candida because they eat too much sugar. They get candida because they eat too much FAT and eat a lot of sugar on top of that. Increases fat consumption will affect your insulin sensitivity and cause blood sugar problems, candida being just one of them.
Go to www.fitday.com and enter all the foods you eat in a day. If your fat consumption (by calories) is over 30%, you’re in trouble. Ideally, you want to be closer to 10%.
So the key is to lower fat consumption. It’s counter-intuitive, but it’s what works. Reduce fat consumption to around 10%, and after many weeks, you may find that your ability to process sugar will dramatically improve.
Exercise to Increase Demand — If there’s no “demand” for sugar, then you’re just eating it in excess. Your body has to “need” it before you can “use” it. One way to improve your insulin sensitivity is to actually get in the habit of exercising before every meal. That way, there’ll be actual demand for the sugar you eat and it can be processed quickly and efficiently.
By the way, when I use the word “sugar”, I really mean the natural sugar and carbohydrates found in fruits and whole foods.
Consume More Greens — Even if you try everything I’ve talked about, there will be an adaptation period in which your body has to get used to a lower fat diet, while not being able to fully process the sugar in fruit. One way to get around that is to actually consume more green vegetables with your fruit. That means eating fruits in combination with green leaves such as celery and romaine lettuce.

Just a tip: it’s not bad food combining to mix greens with fruit. Green vegetables are actually a separate class of food — not to be confused with other types of vegetables such as carrots, which contain starch.
So the key with candida is to reduce your fat consumption and exercise more. That’s what all credible health professionals recommend.
The *root* of the problem is not the sugar in fruit. It’s the excess consumption of fat.

Want more energy? Here are seven quick tips that can help improve your energy levels:
1. Go to bed earlier. The hours before midnight count for double! If you get 6 hours of sleep from 11 p.m. until 5 a.m. you will be more rested than if you get 6 hours of sleep from 2 a.m. until 8 a.m.
Energy does not come from *exercise*. It comes from sleep. So get in the habit of going to bed earlier. That’s the easiest, most effective way to get more energy.
2- Avoid eating late at night. If you can, avoid eating anything a few hours before going to bed. Your sleep will be more restful and you will feel more refreshed in the morning.
3- Practice Yoga — Yoga, with all its healthy stretches and deep breathing, is one of the most effective ways to increase your energy on a day to day basis.
4-Consume Less Fat — Make sure your fat consumption is low enough. Eating too much fat will leave you tired. Aim at 20% fat maximum per calories. Closer to 10% is better.
5-Consume Enough Calories — A lot of people don’t have enough energy simply because they don’t eat enough. If you’re an active man, you probably need about 2500 calories or more. If you’re an active woman, it’s probably around 2000. That’s like eating 20 to 25 bananas each day. So make sure you eat enough. 6- Write it Down — Keeping too many things in your head will drain your energy. You’re constantly wondering what you may have forgotten, what you need to do but you’re not sure what it is… Get in the habit of writing everything down. I keep a notebook in my wallet at all time and couldn’t live without it. I plan all of my weeks in advance and I plan my day ahead of time. It’s the only way to stay sane in this modern world.
7- Try Energy Medicine — Diet is an important factor in health, but it’s maybe 10 or 20% at the most. Your emotions are an even bigger factors. One great way to keep energy moving in your body is to use some form of energy therapies, such as energy medicine or EFT (Emotional Freedom Technique).
